As one of the organisers of previous install weekends I'd be happy to help you start and on the day itself. Note that at the last install weekend we did in fact have a program of talks, this was quite successful.
You need a venue and a decent timescale, say 2 months minimum from making the decision to go ahead. I've posted separately about a related firewall installation service.

Another idea we had discussed is what to do with the time spent waiting
whilst people are having their machines installed; instead of having
them waiting around or sitting quietly waiting for machines to copy, it
might be an idea to arrange presentations and demos - this might also
catalyse the number of people arriving, if we had an 'introduction to
linux and linux installation session' - some possibly ideas for
activities are a basic introduction to OSS and GNU, an introduction to
how linux works, and demonstrations of the OpenCD and Knoppix - this
might be an excellent way to reach people who aren't comfortable having
their machines installed, but are still interested (And would probably
reach quite a broad cross-section of people, depending upon advertising,
to would be a fantastic knoppix/opencd distribution venue).
There are many other things we could demonstrate also which would
catalyse peoples' interest - having a game of enemy territory running on
a few linux machines to demonstrate that windows isn't the only thing in
the house which will happily run games would be one possibility (since
very few people seem to realise that linux runs games really well,
outside linux gamers).
But yeah. :)
