The LPI (www.lpi.org) provide a good vendor-neutral structure for learning about Linux. There are associated exams and certificates.
IMHO learning about Linux is a very practical process and any effective teaching should involve interaction with a person. I personally would question the usefulness of a CBT course though I am sure there will be no shortage of people who would try and sell one to you.
