Personally I use xcdroast as a frontend to cdrecord/mkisofs although gcombust seems to do the same job. It scans for devices and reads the capability from the device so you have to worry too much about configuration.

If you're using Debian you just install xcdroast, it installs the dependencies for you - if you're using some other distro ........

I've not burnt DVDs so I don't know the issues.

There is a very good reference here,
http://fy.chalmers.se/~appro/linux/DVD+RW/ that explains the options for DVD writing. I was never able to get UDF working with large files under the 2.4 kernel. I have not tried on 2.6 yet. I'm having trouble keeping current, never mind trying a patch.
